Conscious Eating Workshops: Providing an Alternative to the Current Food System
The current state of our food system is causing harm to both people and the environment, and desperately needs repair. There are a number of ways to transform it, and one potential way is to think differently about how we acquire our food. Examples include eating food grown locally, buying foods in bulk, or “gleaning” leftover produce from farmers’ fields. In order to share this knowledge, a series of workshops, which will take place at Take Root Café, have been created to guide community members of Northeast Missouri in eating food that is locally grown or causes less of a negative social and environmental impact. There has been a demonstrated desire for workshops of this sort by community members. This study draws on evidence from the disciplines of Environmental Science, Agricultural Science, Education, Nutrition, Economics, and Sociology, along with incorporating firsthand experience from individuals who strive to eat sustainably.
