The Impacts of Incorporating Local Foods on a University Campus

The purpose of this study is to examine the incorporation of local food in a university setting. This project will look at case studies across the United States to understand the structures of various programs that have been successful in developing a cooperative relationship with local food providers and university-contracted food providers. Many publications address environmental benefits of local food purchasing, including the reduction of transportation costs and the support for local growers within the immediate community. In addition, data will be collected concerning the possible products that local growers could provide from the Kirksville community and surrounding region. Environmental awareness programs, such as local food initiatives, display and encourage a university’s commitment to sustainable practices.
