Using Analytical Methods to Determine Polyphenol Effect on Aβ Aggregation
Alzheimer’s disease (AD), a crippling neurological disorder affecting one in nine people, age 65 and older, involves the formation of plaques composed of the amyloid-beta (Aβ) protein. Although no standard treatment has been developed for AD, numerous studies have focused on the potential treatment utilizing polyphenolic compounds. Polyphenolic compounds are naturally occurring antioxidants that are found in many foods we consume. The polyphenols resveratrol, piceatannol, diethylstilbestrol, and pterostilbene were studied to monitor their effects on the aggregation of the Aβ 1 - 42 protein. Analysis of the polyphenols as well as the untreated protein was performed using the Thioflavin T (ThT) fluorescence assay and effects have been observed.
