Food Waste at Truman State University

Jordan N. Goins
Dr. Michael Seipel, Faculty Mentor

This talk presents data regarding post-consumer food waste in Truman State University Dining Halls. In all three dining halls, quantity of food waste is measured by weighing bins containing food waste and recording the number of diners in each hall per meal shift. These data will be used to determine average per-capita post-consumer food waste per meal shift for each dining hall. In addition to gathering baseline data, educational materials were implemented in two of three dining halls. These materials contained information regarding past research and were implemented to test if their presence would impact levels of food waste. These data will be used to develop future campaigns to reduce food waste.
